Hilary shares her fantabulous fusion of life with fiber and other randomness.

Ingredients (Makes 8 servings):

  • 29oz can tomato sauce
  • green pepper, diced
  • 1/2 medium onion, diced
  • 1lb ground turkey
  • 2tsp garlic powder
  • 1/2tsp basil leaves
  • 1/2tsp oregano
  • 1 cup sliced mushrooms
  • 7oz whole wheat rotini
  • 1/2 cup grated parmesean

In large skillet, cook turkey, onions, spices, & green pepper. Add tomato sauce and mushrooms. Turn heat on low and let simmer while pasta boils. When pasta is done, drain and transfer to 9×13 baking dish, mix in sauce. Top with cheeses and bake at 400 degrees (F) for 15mins or until cheese is bubbly.
